Salmon Club Sandwich

Ingredients

1 lb Pacific salmon

1 lb bacon, cooked crisp

1/2 head butter lettuce

1/4 cup Old-bayonnaise

1 tomato, sliced

1 loaf fresh ciabatta


Old-bayonnaise:

2 cups mayonnaise

1 egg yolk

1 Tbs olive oil

2 Tbs Old Bay seasoning

1 lemon, juiced

salt to taste

Blend ingredients in food processor in order

Directions

Slice ciabatta in 12 slices, 3 per sandwich

Spread old-bayonnaise evenly on 1 side of each slice

Layer bread, salmon, bacon, ;lettuce, & tomato. Top with 2nd slice of bread. Re[eat and top with 3rd slice bread.

Slice diagonally and enjoy.
